Cooking Classes
In conjunction with Panache Catering, One Block West and Chef Ed are offering a new series of cooking classes. Held at the Panache Catering facility in Middletown, each class is three hours long and costs $60 ($20/hour) with volume discounts available. All fourteen classes are $600 and you can pick any six classes for $300.
The instructors are Ed Matthews, Chef and Owner of One Block West and Michelle Miller of Panache Catering. Both chefs have extensive restaurant backgrounds and you will learn not only recipes and ideas, but tricks of the trade learned over long years in the restaurant business.

Friday, August 19, 6:30-9:30pm, Sauces: Mother Sauces including Béchamel, Velouté, Hollandaise, Béarnaise, Beurre Blanc and Beurre Rouge with all the variations. Instructor: Michelle Miller.
Wednesday, August 24, 3-6pm, Knife Skills/Boning Workshop: Care and maintenance of Knives, slicing, peeling, paring, dicing, brunoise, boning techniques. Bring your knives. Instructor: Ed Matthews.
Friday, August 26th, 6:30-9:30pm, Fabulous Summer Hors d’Oeuvres. Instructor: Michelle Miller.
Wednesday, August 31, 3-6pm, Summer Soups: Hot and cold soups, gazpacho, minestrone, cream soups, clear soups, vegetarian soups, basics of stock making. Instructor: Ed Matthews.
Saturday, September 3, 6:30-9:30pm, Cool Summer Salads: Easy ways to cook a whole meal with no heat! Instructor: Michelle Miller.
Wednesday, September 7, 3-6pm, Quick Pasta Sauces: cooking pasta, fresh sauces, cooked sauces, dinner in 15 minutes. Instructor: Ed Matthews.
Saturday, September 24, 6:30-9:30pm, Thai Cooking: the basics of some of Thailand’s most popular dishes. Instructor: Michelle Miller.
Wednesday, September 14, 3-6pm, Salsas, Hot Sauces, and Peppers: review of peppers and how to prep them, tomato salsas, green tomato salsa, fruit salsas, tomatillo sauce, hot sauce, sambal oelek, etc. Instructor: Ed Matthews.
Wednesday, September 21, 3-6pm, Custard Desserts: Bread pudding, crème anglaise, crème caramel, creme brûlée, flan. Instructor: Ed Matthews.
Saturday, October 1, 6:30-9:30pm, Roasting: Learn the basics of trussing and roasting with great ideas for side dishes and shortcuts that work. Great for holiday planning. Instructor: Michelle Miller.
Wednesday, September 28, 3-6pm, Eggs: boiled, scrambled, omelettes, soufflé, frittata. Instructor: Ed Matthews.
Wednesday, October 5, 3-6pm, Shellfish and Molluscs: How to prepare Lobsters, Clams, Shrimp, Oysters, Mussels. $15 surcharge for materials for this class. Instructor: Ed Matthews.
Friday, October 7, 6:30-9:30pm, Braising and Pan Searing: steaks, short ribs and how to use the tasty but inexpensive cuts for great dinners. Instructor: Michelle Miller.
Friday, October 14, 6:30-9:30pm, Homemade Pasta and Fillings: Make your own lasagna, ravioli and fillings with a basic sauce including vegetarian. Instructor: Michelle Miller.
